You can use this simple recipe as a base for your own quesadillas or you can serve them as is.
Ingredients
- 2 Tortillas
- 85g (1 cup) Grated Cheddar Cheese
- 1 tablespoon Olive Oil
Method
- Spray one side of the tortilla with olive oil
- Lay the tortilla oiled side down in the air fryer basket
- Spread the grated cheese all over the tortilla ensuring there is a thin lip all round the tortillas edge
- Place the second tortilla on top
- Spray with olive oil
- Using wooden toothpicks secure the top tortilla to prevent it flying off during cooking
- Air fry at 180 C (350 F) for 3 minutes
- Turn the quesadilla over
- Air fry for a further 3 minutes
- Serve

- You can use flour or corn tortillas for this recipe
- Grate your own cheese because pre grated cheese doesn’t melt as well
- We used cheddar cheese, but you can use any cheese that melts well

This recipe draws on the classic Tex Mex idea of using cheese and refried beans.
Ingredients
- 2 Tortillas
- 4 tablespoons Refried Beans
- 85g (1 cup) Grated Cheddar Cheese
- 1 tablespoon Olive Oil
Method
- Spray one side of the tortilla with olive oil
- Place oil side down in the air fryer basket
- Spread refried beans on one half of the tortilla
- Sprinkle grated cheese on top of the beans
- Fold the tortilla in half and pin together using wooden toothpicks
- Repeat for the second tortilla
- Arrange the tortillas in the air fryer basket so that there is a gap between each one
- Air fry at 180 C (350 F) for 4 minutes
- Turn the quesadillas
- Cook for a further 4 minutes or until the tortillas are golden brown and crisp and the cheese has melted

- We used cheddar cheese for this recipe but you can use any cheese that will melt well

- 2 Tortillas
- 85g (1 cup) Grated Cheddar Cheese
- 85g (1 cup) Cooked Chicken (shredded)
- 1 tablespoon Olive Oil
Method
- Spray one side of a tortilla with olive oil
- Place oil side down in the air fryer basket
- Spread the grated cheese all over the tortilla
- Add the shredded chicken
- Place the second tortilla on top and pin down using wooden toothpicks
- Air fry at 180 C (350 F) for 5 minutes
- Remove the toothpicks
- Take the quesadilla from the air fryer basket
- Cut into quarters and serve

You can cook frozen quesadillas in an air fryer directly from the freezer.

- 2 Frozen Quesadillas
Method
- Preheat the air fryer to 200 C (400 F)
- Place 2 frozen quesadillas in the air fryer basket ensuring there is a gap between each one
- Air fry for 5 minutes
- Turn the quesadillas
- Cook for a further 5 minutes
